Chondroitin generally refers to chondroitin sulfate, a glycosaminoglycan mainly extracted from mammalian cartilage, and is the main component of the extracellular matrix of mammalian connective tissue. Its appearance is white or light yellow amorphous powder with strong water absorption, easily soluble in water and becomes a viscous solution, insoluble in organic solvents such as ethanol, ether and acetic acid.
